They Are Good, Seriously

Did I ever mention two of my children cannot have dairy?

Have you ever clicked on every pretty recipe on Pinterest tried to find good recipes that do not include dairy?

I mean really good recipes, not, oh-for-not-having-milk-butter-or-cream-in-it-this-is-not-bad recipes.

They are rare, almost as rare as my creativity in the kitchen prior to having children with food sensitivities.

So when I not only experiment with ingredients but am brave enough to do it with my children and every one of them loves the results, I get really excited to share the recipe here and try to pretend that I am a food photographer before the last piece of evidence is eaten.

blueberry muffin

  • 1/2 cup margarine softened (Fleishmann’s unsalted has no dairy or casein)
  • 1 1/2 cups white sugar
  • 1 teaspoon salt
  • 2 eggs
  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 2 cups fresh blueberries
  • 1/2 cup almond milk (if you use sweetened or vanilla almond milk cut the sugar by about 1/4 cup)
  • 1 tablespoon vanilla extract
  • 1 1/2 tablespoons orange juice
Preheat the oven to 375 degrees and line muffin pans with paper liners.
Mix together margarine, sugar and salt then beat in the eggs one at a time.
Combine the flour and baking powder in another bowl and then add blueberries to this mixture, making sure all blueberries are coated.
Fold the flour mixture into the mixture of eggs/margarine/sugar carefully while alternately adding in the almond milk, vanilla extract and orange juice.
Bake for 25 minutes or until muffin tops are golden brown.
This recipe yields 18 muffins but may yield 24 if everyone keeps their hands out of the bowl.

Feel free to pin this post, I know I’m not the only one who cries a little every time I see “buttermilk” or “cream of x,y,z” in the ingredient list for a recipe.

Coincidentally my name but not my blog haha- she has amazing recipes that really do taste good without dairy. She tries to give a substitute for other ingredients like gluten or soy for most recipes as well. At first I was very skeptical, because I’d read the ingredients and think “There is no way this tastes as good as it says”…but after I tried my first recipe, I was hooked!   2. Oh, Man, I’m clicking away all the time on the tastiest looking recipes…I have a peanut, tree nut, soy, and egg guy! It’s come to the point now, that he’s afraid to eat most anything that is “a baked good”…which is good, and bad too.
    Anyway, I feel you on the successful recipe excitement!

    • Wow, that has to be really tough. And I know exactly what you mean about it being good and bad that he is careful about what he eats. Ashlyn hasn’t been able to have dairy for years and it was nice when she got old enough to tell people but I always felt bad too.

  3. That looks yummy!!! I had to go dairy free for a few months while breastfeeding Monkey some time ago, and I actually had fun looking for dairy-free recipes. I have an apple bread recipe that is delicious – it does have ’2 tablespoons of milk’ in the ingredients, that can be easily substituted with almond milk. Let me know if you want the link :)

  6. Those look delish! My eldest struggled with a dairy intollerance while she was a toddler/pre-schooler. Now she’s a bit better but we still watch her dairy content.

    I’ll keep my eyes out for good dairy-free recipes. Being gluten-free, I know what a constraint it is.

  15. I use almond milk for all of my baking since we don’t drink regular milk. Everything still turns out good.
