Did I ever mention two of my children cannot have dairy?
Have you ever clicked on every pretty recipe on Pinterest tried to find good recipes that do not include dairy?
I mean really good recipes, not, oh-for-not-having-milk-butter-or-cream-in-it-this-is-not-bad recipes.
They are rare, almost as rare as my creativity in the kitchen prior to having children with food sensitivities.
So when I not only experiment with ingredients but am brave enough to do it with my children and every one of them loves the results, I get really excited to share the recipe here and try to pretend that I am a food photographer before the last piece of evidence is eaten.
- 1/2 cup margarine softened (Fleishmann’s unsalted has no dairy or casein)
- 1 1/2 cups white sugar
- 1 teaspoon salt
- 2 eggs
- 2 cups whole wheat flour
- 2 teaspoons baking powder
- 2 cups fresh blueberries
- 1/2 cup almond milk (if you use sweetened or vanilla almond milk cut the sugar by about 1/4 cup)
- 1 tablespoon vanilla extract
- 1 1/2 tablespoons orange juice

Any idea if using plain Soy milk instead of the Almond milk would work? I am new to this dairy-free business and have been using soy milk as our milk substitute… so it’s what I have on hand!

I use almond milk for all of my baking since we don’t drink regular milk. Everything still turns out good.

Oh, Man, I’m clicking away all the time on the tastiest looking recipes…I have a peanut, tree nut, soy, and egg guy! It’s come to the point now, that he’s afraid to eat most anything that is “a baked good”…which is good, and bad too.
Anyway, I feel you on the successful recipe excitement!

Wow, that has to be really tough. And I know exactly what you mean about it being good and bad that he is careful about what he eats. Ashlyn hasn’t been able to have dairy for years and it was nice when she got old enough to tell people but I always felt bad too.

Those look scrumptious! Have you ever checked out http://chocolatecoveredkatie.com/ ? Coincidentally my name but not my blog haha- she has amazing recipes that really do taste good without dairy. She tries to give a substitute for other ingredients like gluten or soy for most recipes as well. At first I was very skeptical, because I’d read the ingredients and think “There is no way this tastes as good as it says”…but after I tried my first recipe, I was hooked!
